Biryani's exact origin is uncertain. In North India, different varieties of biryani were developed in Muslim centres like Delhi, Lucknow. In South India where rice is the staple food, many different varieties of Biryani emerged from Hyderabad Deccan as well as Tamil Nadu where Muslim communities are present. According to historian LIZZIE COLLINGHAM, the modern Biryani developed by the Mughal empire. Indian restaurateur KRIS DHILLON believes that the dish originated on Persia and Mughals brought to India.

LET'S KNOW A SHORT PREPARATION ON BIRYANI :

1. The recipe needs half kg chicken. Add chicken into a large bowl, then add 

      * 3 tsp of curd 

      * 11/4  tsp of ginger garlic paste 

      * 1/2 to 1 tsp of garam masala or Biryani masala 

      * 1/2 tsp of salt 

      * 1/2 to 1 tsp if red chilli powder 

      * 1/4 tsp turmeric powder 

      * 1 tsp lemon juice 

2. Mix everything and leave it then refrigerate overnight in fridge. 

3. Meanwhile add 2 cups of Basmati rice to a pot and rinse it three times. Soak in fresh water for 30 min 

4. Heat oil in a heavy bottom pot or cooker, then add 

       * 1 bay leaf 

      * 4 green cardamons 

      * 6 cloves 

      * 1 inch cinnamon piece 

      * 1 star anise 

       * 3/4 teaspoon jeera 

       * 1 strand mace 

                


5. Add sliced onions  and stir it often till it turns light brown in colour. 

6. Add the marinated chicken and saute until turned pale for 5 min 

7. Put the flame low and cover the cooker until the chicken is cooked completely .

8. Taste the salt and add :

    * 1/4 tsp of curd

    * 1 tsp of garam masala 

    * 1/4 to 1/2 tsp red chilli 

     * 1 slit green chilli 

     * 2 tsp chopped mint leaves 

9. Mix everything and spread it as single layer

10. Put the drained rice into the cooker and pour 3 cups water & add 1/4 to 1/2 tsp of salt 

11. Cover the cooker and leave it for 15 min for 1 whistle. 

12. After 15 min release the lid and gently fluff up with fork 

13. Serve chicken Biryani with layers with raita or shorba.
