LITTLE ABOUT RASAMALAI :

Rasa malai is very popular milk based dessert across India. Actually, milk based recipes will often originate in the West Bengal and Odissa. It is a famous Bengal cuisine dessert. It's Preparation will be more familiar as Rasa gulla's. And Rasa malai was invented since 1930 in Kolkata. So let's get into the recipe. 


INGREDIENTS :

• Cow milk -2 litre 

•Vinegar or lemon juice 

•Cardamon powder 

•Saffron threads 

•Sugar 

•Food colour

•Corn flour 

•Yellow food colour 

•Dry fruits 



PREPARATION:

* Take a pan and pour the fresh cow milk 1 litre which should contain more fat. Stir it well 

* Mean while,  take a bowl and add 2 tsp of vinegar or lemon juice and stir it well.  Now pour it to the milk. 

* You will find some separation in the milk and keep stirring it. 

* Now filter it by using strainer and keep it mind you should place a cloth on your strainer. 

* Store the filtered water, so that you can use it for any kneading process. Squeeze the cloth to remove the excess water and keep the dough  milk aside for 45 minutes. 

* Now again take a pan and pour 1 litre milk. Stir it well in medium flame for 5 minutes. 

* Stir it well until it turns into semi thick consistency.  At this stage, add 1 cup sugar, saffron threads, cardomon powder. But the saffron threads won't give much colour , so add yellow food colour to it. 

* Now stir it well and it will be thick consistency. Add some dry fruits to it and switch off the flame. 

* Take the dough milk and knead it well for 10 min.  So that it will become a soft dough. Then sprinkle some corn flour and again knead it. 

* Now Start rolling it into some medium balls and give some force with your two palms. So that you will get the Rasamalai shape. 

* Take a pan and add 1 1/2 cup of sugar, 4-5 cup of water. It will start boiling and then drop the rasamalai we made one by one into it. 

* Let it boil it for 2-3 minutes. Now cover the pan with lid for 8 minutes. This step will make your rasamalai more soft and fluffy. 

* After 15 minutes take off the rasamalai one by one and squeeze it gently to remove the excess syrup. And lastly transfer all of them to the rabdi which we made earlier. 

* And refrigerate it for 4-5 hours to get soaked well. Then taste your Rasa malai as your snacks 😍
